Almond thins. These can easily be made vegan/dairy free by swapping the butter for flora plant butter. Make sure you use the block one and not the spread one. Whichever you use, but especially if you use the vegan butter, the dough really needs to be frozen overnight and be very prudent about putting it back in the freezer after cutting off the next tray of cookies.
Chocolate torte. I use amaretto because it's cheaper than brandy and that's what I had lying around. Both are excellent.
